Ingredients
  

Cheesecake Mixture

  • 1 cup cream cheese, softened Soften before mixing for a smooth batter.
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs Beat in one at a time.
  • 1/2 cup sour cream

Crust

  • 1/2 cup graham cracker crumbs
  • 1/4 cup unsalted butter, melted Press a small amount into each muffin cup.

Optional Toppings

Preparation

  • Preheat the oven to 325°F (163°C) and grease a mini muffin tin.
  • In a mixing bowl, combine cream cheese, sugar, and vanilla extract until smooth.
  • Beat in the eggs one at a time, then mix in the sour cream.
  • In a separate bowl, mix graham cracker crumbs and melted butter, then press a small amount into the bottom of each muffin cup to form a crust.
  • Pour the cream cheese mixture over the crust in each cup.

Baking

  • Bake for 15-20 minutes or until set.
  • Allow to cool before removing from the tin.

Serving

  • Serve with optional toppings like fruit or chocolate drizzle.

Notes

These cheesecake bites can be served warm or cold. Store leftovers in an airtight container in the refrigerator for up to a week or freeze for up to three months.
