Ingredients
  

Main Ingredients

  • 2 large Russet potatoes washed and scrubbed
  • 1 cup Cooked shredded chicken leftover or rotisserie
  • 1/4 cup Buffalo wing sauce
  • 2 oz Cream cheese softened
  • 2 tbsp Blue cheese crumbles
  • 1 tbsp Green onions sliced, for garnish

Instructions
 

  • Preheat your oven to 400°F (200°C). Poke the potatoes with a fork, wrap in foil, and bake for 50–60 minutes or until tender.
  • In a bowl, mix shredded chicken with buffalo sauce and cream cheese until fully combined.
  • Slice each potato open lengthwise and fluff the insides with a fork.
  • Fill each potato with the buffalo chicken mixture and top with blue cheese crumbles.
  • Garnish with green onions and let rest for 5 minutes before serving.

Notes

You can swap blue cheese for ranch dressing or mozzarella if preferred. This recipe can easily be doubled for guests.
