  • 1 tablespoon butter Adds creaminess to the grits.

Preparation

  • Start by seasoning the chicken breasts with Cajun seasoning, salt, and pepper on both sides. Let it sit for a few minutes to absorb the flavors.

Cooking the Chicken

  • In a skillet over medium heat, add a little oil and cook the chicken for about 6-7 minutes per side or until the chicken is golden brown and cooked through. Remove from the skillet and let it rest.

Preparing the Grits

  • In a saucepan, bring the chicken broth to a boil. Slowly whisk in the grits, reduce the heat to low, and cook for about 20-25 minutes, stirring occasionally, until thickened.
  • Stir in the butter, cheese, and milk until creamy and smooth.

Serving

  • Cut the chicken into slices and serve it over a bed of cheesy grits. Top with chopped green onions for garnish if desired.

Notes

For extra flavor, marinate the chicken in the Cajun seasoning for a few hours or overnight. Make sure to stir the grits often while cooking to prevent them from sticking. If you like a little heat, add a pinch of cayenne pepper to the chicken seasoning.
