Ingredients
  

For the crust

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup sugar

For the cheesecake filling

  • 2 packages (8 oz) cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups apples, peeled and diced
  • 1 cup caramel sauce
  • 1 teaspoon ground cinnamon

Preparation

  • Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  • In a bowl, combine graham cracker crumbs, melted butter, and 1/4 cup sugar to form the crust. Press mixture firmly into the bottom of the prepared baking dish.

Mixing the Filling

  • In another bowl, beat the cream cheese until smooth.
  • Add in 1 cup of sugar and the vanilla extract; mix until combined.
  • Add eggs one at a time, mixing well after each addition.
  • Fold in the diced apples and cinnamon.
  • Pour cheesecake mixture over the crust.

Baking

  • Drizzle caramel sauce on top and use a knife to swirl it into the batter.
  • Bake for 30-35 minutes, or until the center is set.
  • Allow to cool, then refrigerate for at least 3 hours before serving.
  • Cut into bars and enjoy!

Notes

To enhance the flavor, serve these bars with extra caramel sauce on top, whipped cream, or a sprinkle of cinnamon. For best results, use fresh apples and ensure the cream cheese is properly softened.
