  • 1 cup short-grain rice
  • 4 cups whole milk
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/2 cup raisins optional
  • 1 egg lightly beaten
  • 1/4 teaspoon salt

Instructions
 

  • In a large saucepan, combine the rice and milk. Bring to a gentle simmer over medium heat, stirring occasionally to prevent sticking.
  • Once the mixture begins to thicken and the rice is tender (about 30 minutes), stir in the sugar and salt. Reduce heat to low.
  • Temper the beaten egg with a bit of the hot rice mixture, then slowly stir it into the saucepan to thicken the pudding.
  • Add vanilla extract, cinnamon, and raisins. Stir continuously for another 5 minutes until the pudding is creamy and rich.
  • Remove from heat and let cool slightly. Serve warm or chill in the refrigerator before serving.

Notes

For extra creaminess, use a mix of whole milk and heavy cream. Feel free to adjust the sweetness or add orange zest or almond extract for flavor twists.
