  • 1 lb chicken sausage sliced
  • 1 cup orzo pasta
  • 3 cups chicken broth
  • 0.5 cup heavy cream
  • 2 cups fresh spinach
  • 2 cloves garlic minced
  • 0.5 onion chopped
  • 0.5 cup parmesan cheese optional, for serving
  • 1 tbsp olive oil for sautéing
  • salt and pepper to taste

Instructions
 

  • Heat olive oil in a large skillet over medium heat.
  • Add sliced chicken sausage and cook until browned, about 5–7 minutes.
  • Add minced garlic and chopped onion, cook until fragrant (2–3 minutes).
  • Stir in orzo pasta and pour in chicken broth. Bring to a simmer.
  • Reduce heat and cook for 10–12 minutes, stirring occasionally, until orzo is tender.
  • Stir in heavy cream and spinach. Cook until spinach wilts and sauce thickens.
  • Add salt and pepper to taste. Top with parmesan cheese if desired.
  • Serve hot and enjoy!

Notes

For a dairy-free version, use coconut milk instead of cream and skip the parmesan. You can also swap spinach with kale or arugula.
