Ingredients
  

Mashed Potatoes

  • 4 large Potatoes Yukon Gold or Russet
  • 1/2 cup Butter unsalted
  • 1/2 cup Heavy cream warmed
  • 1 tsp Salt to taste
  • 1/2 tsp Black pepper freshly ground

Garlic Shrimp

  • 1 lb Shrimp peeled and deveined
  • 4 cloves Garlic minced
  • 2 tbsp Olive oil
  • 2 tbsp Butter
  • 1 tbsp Lemon juice freshly squeezed
  • 2 tbsp Parsley fresh, chopped

Instructions
 

  • Step 1: Peel and cube the potatoes. Place them in a large pot of salted water and boil until tender, about 15 minutes. Drain well.
  • Step 2: Mash the potatoes while still hot. Add butter, warm heavy cream, salt, and pepper. Mash until smooth and creamy. Set aside and keep warm.
  • Step 3: In a large skillet over medium heat, heat olive oil and butter. Add minced garlic and sauté for 30 seconds until fragrant.
  • Step 4: Add the shrimp to the skillet, season with salt and pepper, and cook for 2-3 minutes per side until pink and opaque.
  • Step 5: Add lemon juice and chopped parsley. Toss to coat the shrimp evenly.
  • Step 6: Serve the garlic shrimp over the creamy mashed potatoes. Garnish with extra parsley if desired.

Notes

For extra flavor, add roasted garlic to the mashed potatoes or sprinkle chili flakes over the shrimp before serving.
