Ingredients
  

Main Ingredients

  • 1 cup jasmine rice cooked
  • 2 pieces chicken breast boneless, skinless
  • 1 tablespoon soy sauce for marinade
  • 1 teaspoon sesame oil
  • 1 teaspoon ginger minced
  • 1 teaspoon garlic minced
  • 1 cup mixed vegetables bell peppers, carrots, snap peas
  • 1 avocado sliced
  • 1 egg soft boiled
  • 1 tablespoon sriracha mayo
  • 1 tablespoon toasted sesame seeds for garnish

Instructions
 

  • Cook the jasmine rice according to package instructions and set aside.
  • Marinate chicken breasts with soy sauce, sesame oil, ginger, and garlic for at least 15 minutes.
  • Grill or pan-sear the marinated chicken over medium heat until fully cooked. Let rest for 10 minutes, then slice.
  • Prepare vegetables by thinly slicing bell peppers, carrots, and snap peas.
  • Soft-boil the egg (about 6 minutes), then peel and halve.
  • To assemble: In a bowl, layer jasmine rice, sliced chicken, vegetables, avocado, and soft-boiled egg.
  • Drizzle with sriracha mayo and garnish with toasted sesame seeds.

Notes

You can substitute jasmine rice with brown rice or quinoa for added nutrition. Adjust sauces to your spice preference.
